A week after coming back from snowboarding I felt a little nostalgic for all the yummy food I had been missing.


Roasted Spicy Chicken With Rice
I spotted this recipe for spicy chicken wings on Google+ and thought I would give it a go. I wanted to put my own spin on it which is why I opted for chicken legs instead of wings and modified some of the ingredients. I also didn’t want to buy thirty chicken wings! The recipe does use ketchup but bear with me, it’s not that bad.

Slow Cooked Beef Ragu
Set this up in the morning / afternoon and it will be lovely just in time for dinner! Adapted from this BBC Good Food recipe.

Chilli Garlic Olive Oil
Inspired by our Italian friend Fran, I’m going to share a nice way to restock your olive oil. It is just regular olive oil but with a kick of chilli! Goes great over pasta and fish but you can use it where ever you would use olive oil. It is also very easy to make. The longer you leave it in the cupboard the better it gets.

Coffee Cake
Back on the cake making! This time with a sugar filled coffee cake that is easy peasy to make. I would leave this for special occasions since the ingredients are rather rich and on the excessive side. Makes for a great cake!

Minty lamb roast
I used to cook something similar to this whilst at university. It lasts at least two meals even with these measures and there is enough left over for a tasty sandwich too! It was so tasty, in fact, that I used to finish most of it in one. That’s probably why went up a trouser size!

Lemon Drizzle Cake
Lemon drizzle cake is something that I have wanted to bake for a while but have never got around to doing. I’m glad that I gave it a go because it is one of the simplest things to make and very tasty!

Mozzarella bruschetta with courgette
Here’s a nice, filling and tasty starter that could easily substitute as a main. A different take on the tomato bruschetta starter. We modified this from a BBC recipe that we cooked for Valentine’s Day. It’s veggie friendly too!!

Mushroom Soup
Of late, I have been subscribed to an interesting food channel on YouTube called RecipeWars. The concept is simple: two chefs head to head, best recipe wins. Only they don’t really win anything it is for funsies. What you do get is two enthusiastic chefs trying out two recipes (largely from famous US chefs) whilst providing some rather good commentary about the ingredients and what works well. Whilst I would prefer a slightly broader scope in recipe sources - such as those from international chefs - I have enjoyed watching the channel and continue to do so.
